Ingredients

  • Garlic head
  • Olive oil
  • 1 white onion
  • 3 habanero peppers
  • 3 red jalapeños
  • 3 yellow jalapeños
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • Salt and pepper
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/2 ripe mango
  • 1/2 cup orange juice
  • 1/4 cup butter
  • 1 teaspoon Worchestershire sauce

Instructions

  • Start off by sliding the top off a head of garlic, coating it in olive oil and wrapping it in aluminum foil.
  • Place it on a baking tray with 1 white onion, 3 habanero peppers, 3 red and yellow jalapeños, 1 red, yellow and orange bell pepper.
  • Coat all the peppers with olive oil and salt and pepper and roast at 450°F for 45 minutes.
  • When they are cool to touch, remove the stems and place all the roasted vegetables in a high powered blender alone with the roasted garlic, 1/2 cup of white vinegar and 1/2 cup of water, 1/2 of a ripe mango, 1/2 cup of orange juice, and salt and pepper.
  • Run the blender for a few minutes just until everything is well combined.
  • Transfer the sauce to a strainer and using a spoon, press the pulp to extract maximum sauce.
  • This sauce is good on its own, but better as wing sauce.
  • Add 1/2 cup of the sauce to a medium high saucepan or pot, and add 1/4 cup of butter and 1 teaspoon of worchestershire.
  • When the butter melts, mix it all together and take it off the heat.
  • Toss your favorite wings in this elevated habanero mango wing sauce and enjoy!
