For the protein tortillas

  • 1 1/2 cups all purpose flour
  • 3/4 cups Greek yogurt
  • 1 scoop of unflavored protein powder

For the burrito

  • 6 eggs
  • 1/2 cup cottage cheese
  • 6 strips of turkey bacon
  • 1/2 cup cooked ground turkey sausage
  • 1 cup grated colby jack cheese
  • 1 avocado


For the tortilla

  • Combine the flour with the Greek yogurt and mix until a dough forms. If it seems a bit wet, add some more flour. Separate it into 4 balls and cover and let rest for 10 minutes.
  • After 10 minutes, roll it out as thin as possible. Or use a tortilla press.
  • Heat a large skillet to high, and add the flour tortilla on top. Cook for about 2 minutes., on both sides or just until it bubbles and gets browned. Set aside.

For the eggs

  • Combine the eggs in a bowl with salt, pepper and the cottage cheese. Mix it well. Add some butter to a medium high pan and when the butter metals, add the egg mixture.
  • Continue to stir the eggs making sure they don’t over cook and cook until a scrambled consistency is achieved. Set aside.
  • To assemble the burrito, lay down the tortilla. Add the cheese on top. Add the turkey bacon on top followed by the avocado, eggs and sausage. Roll it up.
  • Heat the burrito on a medium skillet seam side down for about 3 minutes. Turn over and cook on the opposite side. Slice and enjoy!
