For the Pancake Batter

  • 2 cups of all purpose flour
  • 2 teaspoons of baking powder and baking soda each
  • 1 teaspoon of cinnamon
  • 1/2 cup of toasted coconut divided
  • 1/4 cup sugar
  • 1 egg
  • 1 1/2 cups of milk

For the Salted Rum Caramel

  • 1 cup of sugar
  • 1/3 cup of salted butter
  • 4 tablespoons of water
  • 1/2 cup of heavy cream
  • 1/3 cup of dark rum
  • 1 teaspoon of flaky salt

For the Pancakes

  • 1 pineapple sliced and cored 10 slices
  • 10 maraschino cherries


  • Start by toasting some coconut until golden brown.
  • For the caramel, combine some sugar with water and simmering.
  • Once it’s golden brown, add some salted butter and heavy cream.
  • Turn off the heat and mix in dark rum and flaky salt.
  • For the pancake dry batter, combine all purpose flour with that toasted cocnut, baking soda, baking powder and cinnamon.
  • The wet batter includes melted butter with sugar and whisk in an egg.
  • Pour the wet batter into the dry batter and mix together while pouring in milk.
  • Thinly slice a pineapple and use two different sized cookie cutters to create a donut shape.
  • Add a couple ladles of the pancake batter onto a medium-heat skillet.
  • Place the sliced pineapple in the middle followed by a maraschino cherry.
  • Sprinkle on some brown sugar and once bubbles form on the batter, flip it and let it cook for another couple minutes.
  • Serve it drizzled with the Rum Caramel and maraschino cherries.
  • Sprinkle on some coconut flakes and enjoy!
