For the loaded fries

  • 5 medium gold potatoes
  • 1/4 cup vinegar
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons cumin
  • 1 teaspoon salt and pepper
  • 4 cups grated Oaxaca cheese
  • 12 ounce pork or beef chorizo
  • 1 diced onion
  • 1/4 cup chopped cilantro

For the sauce

  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • 1/4 cup chipotle in adobo
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1/2 cup cilantro
  • Salt and pepper to taste


  • Cut some Yukon gold potatoes with a crinkle cut knife and soak them in cold water. Add vinegar and salt to a pot of boiling water and boil the potatoes for about 5 minutes. Use a salad spinner to best get all the moisture off the potatoes and lay them on a paper towel lined baking tray.
  • Cook some chorizo and add onion for flavor and texture.
  • Make the sauce by combining sour cream, honey, chipotle in adobo mayonnaise with lime juice and some cilantro.
  • Fry the fries in 375°F cooking oil for about 5-7 minutes. Season them with chili powder, onion and garlic powder, cumin, salt and pepper.
  • Sprinkle some Oaxaca cheese and the chorizo mixture on a nonstick pan. Place it in a hot oven until the cheese is just melted.
  • Plate the fries and slide the cheesy chorizo mixture over it and enjoy!
