For the wings

  • 12 chicken wings
  • 3 egg whites
  • 1 cup potato starch
  • Jerk seasoning

For the mango habanero sauce

  • 1 medium diced onion
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 2 cups diced mango
  • 1 1/2 cups mango juice
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 2 tablespoons molasses
  • 2 tablespoons lime juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • 2 tablespoons diced habanero
  • 1 cup tomato sauce

For the jerk seasoning

  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon parsley
  • 2 teaspoons cayenne
  • 2 teaspoons smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper

For the coconut lime dipping sauce

  • 1/2 cup coconut yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon lime zest
  • Honey
  • Salt and pepper


  • Sauté a diced onion with ginger and garlic. Add some fresh mango and mango juice. Mix in honey, molasses, lime juice, brown sugar, Worcestershire sauce, tomato sauce and diced habanero. Cook that down for 30 minutes before blending to a smoother consistency.
  • Create the jerk seasoning by blending all the ingredients, then split in half. Crack egg whites into the wet dredge bowl with half the jerk seasoning, while pour potato starch into the dry dredge bowl with other half jerk seasoning.
  • Add the chicken wings to the wet dredge and coat fully. Transfer over to the dry dredge and coat fully.
  • Pop them on an air fryer basket and spray with cooking oil. Air fry at 400°F for 25 minutes, flipping halfway.
  • In the meantime, make the coconut lime dipping sauce by mixing coconut yogurt with lime juice, Worcestershire sauce, minced garlic, lime zest, salt and pepper.
  • When the wings are done, toss them in the mango habanero sauce. Plate with the dipping sauce and enjoy!
