Ingredients
  

  • Pork or beef chorizo
  • 2 tablespoons all purpose flour
  • 1 cup milk
  • 1/4 cup beef stock
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup grated pepper jack cheese
  • 1/2 cup grated Oaxaca cheese
  • Corn tortillas
  • Salt
  • Green onions

Instructions
 

  • Fry some pork or beef chorizo in a saucepan or pot until browned and cooked through.
  • Add 2 tablespoons of all purpose flour and mix well until no more flour is showing. Whisk in 1 cup of milk and then 1/4 cup of beef stock.
  • Add 1 tablespoon of garlic and onion powder and then 1 teaspoon of cumin, salt and pepper. Whisk in 1 cup of grated pepper jack cheese and then transfer to an oven safe pan.
  • Using 1/2 cup of grated Oaxaca cheese, place in the oven on broil until the cheese on top starts to melt.
  • For the chips, cut some corn tortillas in half and then in half again. Add them to a wooden skewer to create a scoop like shape.
  • Fry them, at 350°F for a few minutes or until they’re crispy. Season with salt, garnish the queso with green onions.
