For the chocolate chip banana pancakes

  • 3 cups all purpose flour
  • 2 1/2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 1/2 cups milk
  • 1/4 cup melted butter
  • 2 eggs
  • 1/4 cup cinnamon
  • 2 cups mini chocolate chips
  • 2 mashed bananas

For the pudding

  • 2 sliced bananas
  • 6 eggs
  • 1 1/2 cups milk
  • 1 1/2 cups heavy cream
  • 2 tablespoons vanilla extract
  • 1 cup sugar
  • Maple syrup for serving


  • Start by combining flour with baking powder, sugar, salt and cinnamon then sifting it into a bowl. Add the wet ingredients like milk and melted butter then crack a couple eggs. Whisk until it reaches a nice batter consistency. Toss in some chopped bananas.
  • Dump the batter to fit a medium sized pan before adding some chocolate chips. Flip after it starts to bubble and form holes. Repeat until you make a dozen pancakes and cut those in half.
  • Line a Pyrex dish with these sliced pancakes standing vertically. Cut some more banana pieces on top. Whisk more eggs with milk, heavy cream, vanilla extract and sugar then pour that mixture over the entire dish. Let it soak overnight.
  • Once cooled, bake at 350°F for 30-40 minutes and enjoy with maple syrup!
