Ingredients
  

  • 1 cup brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt and pepper
  • 3 pounds pork belly
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 5 knobs butter

Instructions
 

  • Start off by making the rub by combining 1 cup of brown sugar with 1 tablespoon of garlic powder onion powder and smoked paprika and 1 teaspoon of salt and pepper.
  • Carefully slice the skin off a 3 pound pork belly and then cut it into 1 inch cubes. Thoroughly coat the pork belly in the brown sugar rub and then place them on a wire rack on top of a baking tray.
  • Bake the pork belly in a 275°F oven for 3 hours.
  • After the first bake, add the cooked pork belly to a bowl and drizzle 1/4 cup of maple syrup and 1/4 cup of honey and toss it all together.
  • Place the pork belly in a parchment paper lined cake pan and add about 5 knobs of butter, cover and cook for an additionally 30 minutes.
