For the wings

  • 16 chicken wings
  • 3 egg whites
  • 2 tablespoons chili sauce
  • 1 cup potato starch
  • 1/4 cup Kashmiri chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons ginger powder
  • 2 tablespoons garam masala
  • 1 teaspoon black pepper

For the serrano dipping sauce

  • 1 cup cilantro
  • 1 serrano pepper
  • 2 tablespoons minced garlic
  • Juice of a lime
  • 1 cup greek yogurt
  • Salt and pepper to taste

For the butter chicken sauce

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 cup Kashmiri chili powder
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 2 tablespoons garam masala
  • 2 tablespoons honey
  • 2 tablespoons tomato paste
  • 1/2 cup heavy cream
  • Juice of a lime


  • Combine some chili sauce with egg whites in one bowl. In another bowl, combine potato starch, Kashmiri chili, garlic powder, onion powder, garam masala, white pepper and ginger powder. Fully coat the wings in the egg white mixture before fully coating in the potato starch mixture.
  • Place them on an air fryer basket at 400°F for 25 minutes, flipping halfway through.
  • In the meantime, make the serrano sauce by blending cilantro with garlic, serrano chilies, Greek yogurt, lime juice and seasoned with salt and pepper.
  • Also make the butter chicken sauce bymelting butter then mixing minced ginger, minced garlic, garam masala and white pepper. Pour some honey and tomato paste along with heavy cream to thicken it up. Add lime juice and season with salt and pepper.
  • Once the wings are done, toss them in the butter chicken sauce. Plate with the serrano sauce as a dip and enjoy!
