For the chicken

  • 1/2 pound chicken breast
  • Salt
  • Onion powder

For the buffalo chicken mixture

  • 1/2 cup cooked bacon bits
  • 1 cup room temperature cream cheese
  • 1 cup sharp shredded cheddar
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1/4 cup your favorite hot sauce

For the jalapeño popper bites

  • 2 large jalapeños
  • 5 eggs
  • 1/2 cup hot sauce
  • 2 cups all purpose flour
  • 1/4 cup paprika
  • 1/4 cup garlic powder
  • 2 cups bread crumbs


  • Season 1/2 pound of chicken breasts with salt and onion powder. Fry them on medium high for 3 minutes a side and transfer the chicken to a food processor.
  • Pulse the chicken a few times to break it up, then add 1/2 cup of cooked bacon bits, 1 cup of room temperature cream cheese, 1 cup of sharp shredded cheddar, 1 tablespoon of onion powder, garlic powder, and paprika, and a pinch of salt. Run the food processor and then add 1/4 cup of your favorite hot sauce. Transfer the mixture to a piping bag or plastic freezer bag.
  • Cut the top off a large jalapeño and using a fork, scoop out the seeds and stems from the inside. Fill the jalapeño up with the chicken and cheese mixture and then slice them into 1 inch pieces. Put them in the freezer for about 10 minutes.
  • In a bowl combine 5 eggs with 1/2 cup of hot sauce. In another bowl combine 2 cups of all purpose flour with 1/4 cup of paprika and garlic powder. In a 3rd bowl 2 cups of bread crumbs.
  • Coat the jalapeño piece in the flour, the in the egg wash, then in the bread crumbs, then back in the egg wash and breadcrumbs for a double dredge.
  • Fry the jalapeños at 375°F for 3-4 minutes or airfryer at 425° for 10 minutes.
