Ingredients
  

For the pizza

  • 2 cups pinto beans
  • 1 cup diced onions
  • 2 chopped cloves of garlic
  • 1 cup chicken stock
  • 1 lime
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 500 grams of pizza dough
  • 2 cups grated Oaxaca cheese

For the salsa

  • 10 tomatillos
  • 2 jalapeños
  • 4 cloves of garlic
  • 4 small onions
  • 1 lime
  • 1 cup cilantro
  • 1 teaspoon cumin

Instructions
 

  • First, make the tomatillo salsa by seasoning onions, tomatillos, jalapeños and garlic with salt and pepper then roasting it. Blend it all up in a blender with some lime and cilantro then set aside.
  • To make the refried beans, sauté some onions and add garlic, smoked paprika, little bit of cumin and chili powder. Enter the pinto beans and some chicken stock then cook that down for a bit, mashing it up until you reach the consistency you like.
  • Use your favorite pizza dough to stretch it out edge to edge on a LloydPan. Add the refried beans then the Oaxaca cheese. Bake it at 450°F for 20 minutes, slice it up and add the salsa. Enjoy!
