Bagel Breakfast Casserole by me, because I always love revolutionizing the breakfast game! Schmear everything bagels, stack them high, then slice into chunks of awesomeness in a Pyrex bash. Layer on cheddar, sausage, rebel red onions, juicy tomatoes and bacon confetti – customize like it's a bagel disco! Pour a liquid party of eggs, milk, and cream. Bake and cue the bagel alchemy for an hour. While that bakes, whip up a Breakfast Sauce fiesta – mayo, mustard, hot sauce, lemon jazz, honey groove, dill dance, salt, and pepper play tag. The grand finale! Let it cool for 10, then crown with the sauce. Bagel brilliance: where flavors party harder than your brunch plans!

For the casserole

  • 5 everything bagels
  • 1 1/2 cups chive and onion cream cheese
  • 2 cups chopped cheddar cheese
  • 2 cups cooked breakfast sausage
  • 2 cups chopped red onions
  • 2 cups chopped tomatoes
  • 2 cups chopped cooked bacon
  • 12 eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1/4 cup chopped chives for garnish

For the sauce

  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup hot sauce
  • 2 tablespoons lemon juice
  • 1/4 cup honey
  • 2 tablespoons dill weed
  • Salt and pepper to taste


  • Start by spreading some chive and onion cream cheese on everything bagels. Create a sandwich with the bagels then cut them up into small pieces and place them at the bottom of a Pyrex dish.
  • Add some cubed cheddar cheese, cooked ground sausage, red onions, chopped tomatoes and a little bit of bacon. Repeat all the ingredients to form another layer, you can opt to use different cheese, meats or veggies. Once everything is layered, add eggs that are combined with milk and cream and cover the entire thing.
  • Bake in the oven at 325°F for 1 hour.
  • In the meantime, make the breakfast sauce by mixing mayonnaise, yellow mustard, hot sauce, lemon juice, honey, dillweed, salt and pepper.
  • Once the casserole is done, let it sit for about 10 minutes to cool and enjoy with the sauce!
